Chicken enchiladas
Quick and easy chicken enchiladas with black beans, corn, and rice.

Ingredients
- 1 can black beans
- 1 can corn
- 8 flour tortillas
- 3 cups shredded Mexican cheese blend
- 1 can red enchilada sauce
- Rice
- Cooked chicken, shredded
Recipe

Preheat oven according to enchilada sauce can instructions.

In a bowl, combine shredded chicken, black beans, corn, and some of the cheese.

Fill tortillas with mixture, roll them up, and place seam-side down in a baking dish.

Pour enchilada sauce over the top and sprinkle with remaining cheese.

Bake until bubbly and cheese is melted.

Serve with rice.
